Good morning Triber! Go to your Seller Hub page and then under Seller Tools you should see a shortcut to Time Away. That is what they are calling putting your store on vacation now. I haven't actually used it yet but I think it is similar to the old vacation setting.

If you cannot find the link, you can also click the "Help and Connect" button that is at the top of every page and search for Time Away and it will bring up a direct link. The help link is:

You will have options to either put your listings on hold and they are not visibile, or have them visible and people can buy but there will be a message that you are away and shipping will be when you are back. The maximum time is for 30 days, but you can end it just before that and put it back on for another 30 days.

It's essentially exactly the same (but available to all users), they made an attempt to clarify the language used since so many people seemed to have issues understanting the old Vacation setting.
In their attempt at clarity all eBay really did was clear up some of the old confusion and replace it with new but similar confusion.
Personally I never had any confusion but many seemed to not understand that a vacation is a vacation it's not a free pass to ship days or weeks late.
When I use Time Away I hide all my listings and set the reopening date to 2 - 3 days before I expect to return and be able to ship again. For short duration absenses I will leave my items available and change my handling time to suit. For anything longer than 5 days I hide all listings.
Another option if you only have Fixed Price listings is to use the out of stock method, bulk edit all listings to a quantity of zero, bulkk edit back when you return. This method will work for longer than 30 days but be aware Out Of Stock listing will be cancelled by eBay eventually, eventually being at least 2 full months of no stock (a bit erratic because I have a few OOS listings that eBay has let run for 4+ months).

I have only used it with fixed listings, what happens with auctions? It seems odd that you could put it on time away for 10 days or something, leave it visible, then ship way after the auction ends. Curious about the mechanics.

Time Away does not work for Auctions, neither did the old vacation settings.
Time away will extend the estimated delivery dates on Active Auctions but there seems to be some controversy about shipping time metrics.
