I'm sticking with putting the shipping date in the feedback (and tracking number if it do track) which seems to work for me.
It's hard to type with all your fingers crossed, though.
That letter sounds good. Friendly, "we're all in this together", and professional.
Good work.

My own experience when I put the ship date in the feedback many moons ago was that I was continuously getting messages asking if I had shipped, so at that point I changed the process so that my customers all get a message, here are the current COVID'd form letters I use:
A new first time buyer:
================
Thank you for your purchase and quick payment. Your parcel has been shipped out today, Monday XXXXXXX. Note that the global pandemic may impact the parcel delivery timeline. Some parcels move at normal speed or even more quickly, some are slowed down significantly. A lot depends on which sorting/customs centers are affected and for how long they are impacted. Once the parcel arrives, I hope you will find everything satisfactory. If you are not completely pleased with this transaction, please contact me via a message. I will do my very best to resolve any problem you may have. Thank you very much in advance for your extra patience while the parcel makes the journey. Regards, RICARMIC (Ron)
PS as a note, given the current global pandemic concerns, any of the shipping components that are not self adhesive like envelope flaps, and stamps on the parcel are affixed using the sponge and water approach, not the licking approach.
A repeat buyer:

I have been sending messages on receipt of payment and explained the possible delay because of the virus. I am amazed at how many reply and tell me not to worry, they understand and will be patient, I thing about 45% have replied, which I really appreciate. Quite a few feedbacks remark on fast shipping.

I shipped a tracked item last Wednesday. So far all that is showing for tracking information is that it was accepted on Wednesday. Nothing else. While I appreciate these are difficult times, we do pay quite a bit more for tracked items so would be nice if they got scanned like they are supposed to be.
I would certainly hope that eBay is taking potential delays due to this pandemic into account when giving estimated time lines.

How do you know it's not being scanned like it's supposed to be?
A tracked package I sent last Wednesday (scanned at the postal outlet), got it's next scan on Tuesday (at the hub were it supposed to happen next). Even allowing for the long Easter holiday, it took much longer than "normal times" for processing.
Sent 2 tracked packages Tuesday morning that are still waiting for their next hub scan. Normally, those scans would have happened same night or early next morning.

Here's a suggestion.........................................
If you people want added protection, on 'dot com' set your HANDLING TIME
to 30 days and select ECONOMY SHIPPING which gives you 11 to 23 days
for a total of 53 days for delivery.
On 'dot ca' you can set your HANDLING TIME to 40 days and shipping time will be according to your choice giving you near 50 days for delivery.

Might be useful for untracked shipping. Although more because your sales will drop to zero.
And if using tracked parcel, an overkill suggestion.
The A-river is using your suggestion for non-essential items in their warehouses by adding about 4 weeks for handling. So an AZ buyer can pay more to use "next day shipping" and have their purchase delivery dates be a month later.

I use 30 day handling all the time plus 11 to 23 day Economy and have no problems.
If buyers want to know why so long I just tell them that normal delivery is about 10 days.
This extended time helps protect against requests for refunds due to non delivery within stated time.
I don't think it affects sales to any large degree. If someone wants a certain item they will buy it regardless of delivery time.

And it has been noticed by the buying public.
I'm seeing grumpy posts about it on FaceBook. (Most of my friends are 20-30 years younger than me and very tech-savvy.)

I know that it is impacting A-R sales, we broke our french fry cutter and needed to get a new one. The A-R delivery date was a month away, so instead got one during the next grocery shop instead...

Tracked packet to Pennsylvania submitted to Toronto Postal office April 7
April 12 I got a message from USPS (Chicago) that potential delivery date April 16.
Nothing changed since then and no messages on potential new delivery date.
The record has a statement on top
Due to the coronavirus emergency, deliveries may be delayed.

I've only had 5 or so in the past 30 days but so far no complaints of items not delivered and no claims for refunds.
I have seen in some instances where my packages to the US arrives faster to the intended addresses than shipping it to one within Canada.

(PS I have never in all my days had so many people contacting me about when my store will reopen, and I usually shut down for a month in the summertime! People are really looking for stuff to do that is for certain!)
I'm involved in retail and for both the business I am in and what I sell, I have seen an increase in sales in certain areas. For instance, people who are staying home have given the business I work for an increase in baked goods, board games, summer toys, etc.
For what I sell, DVDs/Blu-rays, I've had some good sales, nothing great because I'm still trying to establish an identity but better than I should at this time.

It seemed to take too long from 8th to 15th. 8th shows accepted, 15th shows in transit but not where.

I had a surprising number of people thank me for not licking things!!!
Interesting happenings. I may follow your example and mention "non licked envelopes and stamps" who would ever have guessed such a thing being a preferred customer service.
Throughout March and April I've sent 20 or so postcards out by letter-mail across Canada, United States and the United Kingdom. Have not had anyone complaints of not receiving anything so far.
I am experiencing slow delivery of some garden seeds I purchased from a Brandon Manitoba vendor, this was not an ebay transaction. The vendor created the label April 03 and the tracking has it still in transit today April 16, CP estimated delivery was on the 14th, so that one is certainly slower than normal. Oh well …. we were experiencing snow squalls here again today so we're in no hurry to plant the garden just yet.
