unless you have multiples of said items that have sold, then that equates to no item available and all listings must be for an available item, so therefore must end/delete any listings currently on eBay. It matters not whether you delete or end, so long as those listings are no longer active on eBay. If per chance you think you may have same or similar items to list at a later date you can always save those "ended" listings to use at some point in the future, but if said sold items are one of a kind and no further items of that type will be forthcoming, best to delete those listings.
As recped said you need to end them on eBay ASAP because "out of stock" ebay defects are very bad and based on your volume you can't survive many of them without visibility and $$$ (fees) "punishment".
You should end your listings on eBay ASAP if the item is no longer available.
eBay is very strict about sellers cancelling transactions for items being out of stock. Your account will receive a defect. After a few defects, a newer account would probably be at risk for suspension.
If you sell across multiple platforms, there might be software that manages this for you. With that said, it may not be worth it to automate it unless you're dealing with hundreds of unique items.
