eBay's direction on the topic of "I sold an item but the buyer hasn’t paid." is thus:
"If you haven’t been paid for an item you sold, start by communicating directly with the buyer via Messages in My eBay. This will provide a documentation trail in case the issue is ever escalated to eBay.
If you can’t work things out with the buyer, you can cancel the transaction."

Did you send out offers? That could explain it. I don't think the items are available for sale. eBay has a setting where you can have them automatically cancel an order and relist the item (and give the buyer an unpaid item strike) if the buyer hasn't paid for x number of days. What do you have yours set to?

If no offers are involved.
After 4 days cancel the order using the reason "buyer didn't pay". I think that when you go through that process on the last screen there will be a box to tick (or untick?) to have eBay relist for you. Use that or if it's not there just manually relist.
If Offers are involved the process may be different depending on your settings for Offers and whether it is an Offer from the Buyer or an Offer initiated by the Seller. I don't do Offers so I'm not fully aware of how they work relating to unpaid items.

After you've made a sale on eBay, it's usually a smooth process to complete the transaction with the buyer, but sometimes you might find yourself in a situation where the buyer hasn't yet paid for the item they bought.
If that happens, you can cancel the order after 4 or more calendar days. If the listing was a single quantity, Buy It Now item, it will be relisted automatically unless you choose not to relist.
After a buyer wins an auction or commits to buy an item, we send emails reminding them to pay for the order. You can also get in touch with your buyer - opens in new window or tab to remind them.
If the buyer still hasn't paid 4 calendar days after the listing ended, you can cancel the order by selecting the Cancel order button below and choosing Buyer hasn't paid in the drop down menu.
If you've sent a combined invoice, you'll be able to cancel the order 4 or more days after the date the invoice was sent to the buyer.
Cancel order
Once you cancel the order, your item will be relisted automatically if it was a single quantity, Buy It Now item, unless you choose not to relist. We'll also remove any feedback left by the buyer.
Once the order has been cancelled, you can make a second chance offer to the next highest bidder if you listed using the auction format.
It's important to cancel any unpaid items within 30 days from the day the buyer commits to buy so the item can be relisted.
Tip
You don't have to contact the buyer if they haven't paid – we'll send them reminders to pay. If you don't receive payment, you can cancel the order after 4 calendar days.
